PASTA No.2
PASTA SALMONE:
smoked salmon slices ( you can find this vacuum packed in the gourmet section of your grocery ) about 250-300 gms.
fresh cream, 500 gms.
capers, 2-3 tbsp.
green peppercorns, 1/2 tsp.
button mushrooms, 1 c sliced
1/4 c tomato sauce
cooked penne pasta, 500 gms.
HOW TO:
1. Over medium heat in a saucepan pour in cream, let simmer for about 5 minutes.
2. Continue simmering until thick, then add the capers ( dry them with a paper towel ), peppercorns, and season with a little salt.

4. Add the quarter cup of tomato sauce ( solely for the purpose of giving it color ) then add mushrooms last. Another 5 minutes of simmering to allow blending of flavors, then...
5. Mix cooked penne with the sauce in the same pan.
6. Serve on a pasta platter with just a bit of shaved parmesan, freshly cracked pepper, and garlic bread.
