" LA PASTA "


Pasta dishes are always a favourite, me? I looove them- all sorts, and I guess I was lucky to be able to work in an authentic Italian restaurant under the wings of the Barattieri couple who taught me how to cook pasta ' the Italian ' way.
So, I chose some of those recipes which are easy enough for beginners yet still very mouthwateringly delicious:

PASTA No.1
POLLO CANELLONI:

3/4 cup sundried tomatoes
250 gms. cream cheese
fresh basil leaves
cooked chicken meat, sliced ( you can use smoked chicken, they're quite nice )
cooked canelloni tubes, make sure they're 'al dente'

Sauce:
fresh cream ( you may use lite )
a dollop or two of tomato sauce
3/4 c chicken broth

HOW TO:
1. Pre-heat oven 180 deg. prepare a rectangular baking tray or pyrex dish.
2. Food process sun dried tomatoes and basil leaves, adding cream cheese last, season with salt and pepper. Transfer to a bowl.
3. Fill cannelloni tubes with cream cheese filling and chicken slices, to the brim.
4. Arrange side by side in your baking tray, pour over about 200 gms. of cream-mixed with 3-5 tbsp. of tomatoe sauce and about 100 gms. chicken broth.
5. Sprinkle generously with shaved parmigiano/ parmesan cheese. Bake until sauce is bubbly.
* You may also, halfway through cooking place bruschetta/french bread- sliced and brushed with olivio-garlic oil mixture, on top of the pasta- ready to go with the meal...Sounds good? Try it.
