Yummy Sammies Combinations




I love sandwiches :) they're easy to make especially if you're on the run or for lunchboxes, afternoon smokos with friends? they are versatile eh? and having said that I am meticulous with the kinds that I want, when my hubby and I go Cafe' hopping I take time (LOL)choosing which sammy goes best with my cup of moccha...and I often go for warm, creamy, toasted ones too (hmm...)yummy!
I often make sandwiches at home and here are some nice combinations- my personal favourites which I thought you may find interesting:





Sammy#1

Ciabbatta, croissant or whatever bread you like -breads with crisp, crusty shells and chewy soft on the inside are quite nice!
cottage cheese (generous amount if you don't mind...)
smoked ham/chicken, or parma ham
cucumbers, sliced
avocados, sliced
lettuce
tomato slices
rocket leaves
* toast them (minus the salad)- nice and fresh !

Sammy#2

Paninis
Shaved parmesan

* 1 pottle of cream cheese, dash of salt, 1 tsp. crushed garlic + 5-8 pieces of sundried tomatoes, food processed so you'll end up with a creamy mixture

* Slice 2 boneless chicken breasts in half, in a hot skillet with 2 tbsp. butter/margarine, 1/2 tsp. minced garlic, sear the chicken and then add in a cup of white wine- let it simmer til it is cooked through. When the wine has evaporated, add in a tbsp. of oil and cook both sides. Cool and slice thinly.

Slice panini in half, spread a generous amount of cream cheese mixture, then chicken slices then finish with shaved parmesan. Toast.

Sammy#3

* 1 cucumber, food processed (not pureed! we want it a bit chunky) and placed in a colander to drain- add a tbsp. of salt to help drain out the liquid.

* Prawns, shelled, deveined and cooked in 2 tbsp. butter, olive oil, dash of salt.

1 pottle of plain or herbed cottage cheese
avocado slices
panini or bruschetta


>> after the cucumber has drained well, mix it with the cottage cheese and add a tsp. of minced garlic- blend well. Slice bread in half, spread the cucumber mixture, top with the prawns (as little or as many as you like)and the rest of the ingredients. Grill.


YUMMY!!! of course you can add more stuff in it if you want to or use salami, pancetta, any other filling that you may want. These are just ideas from my own mixing and matching of ingredients and cheeses.

yes, they actually hold up well but i use foil to wrap them instead of gladwrap :)
