Prawn with Red Curry Paste

Hi, folks! here's another recipe of mine and if you like spicy + seafood- then this one is for you. Again very easy to make, every beginner would love this actually because it's really simple. This will cook in 5 minutes time, so if you have visitors, leave this until just before dinner time- so it's piping hot and it's just better to serve it that way, I guess. You can make it as mild or as hot as you want, I normally like it medium hot, anyway, here we go:

INGREDIENTS:

fresh prawns (not pre-cooked please), 1-2 kgs.peeled except for the tail bit
authentic red curry paste, 1-2 tsp. or more ( I normally use 1 tbsp.)
butter 1/2 cup
minced fresh garlic, 1 tbsp. (halve it if you want to)
baby peas 1-2 cups (I use baby peas cause they're sweeter...)
fresh button mushrooms, halved

HOW TO:

1. Heat skillet/wok and pour in 1 tbsp. oil, then add butter.
2. Add in your curry paste, followed by prawns and then the garlic ( try not to burn the garlic!)
3. Once the prawns start to curl and turn slightly pink on both sides, add in the baby peas and turn heat to low. We don't want to overcook it, see.
4. Season with salt & a tad bit of worcetershire, a tsp. perhaps? Turn off the fire/heat.
5. Add in the fresh mushrooms and mix- cover for a minute and allow the heat to cook it, that way it won't wilt and it won't turn mushy. Take cover off and plate.

Serve with steamed jasmine rice, yumm...
