I know I havent made any postings for awhile...been really preoccupied with Josh lately. Anyway AM BACK! and here's another simple yet mouthwatering recipe for anyone interested. Salmon is one of my favourite fishes, it's really creamy and tender and with the right seasoning- oh so yummy. I love to cook it ' sinigang ' style but this paricular recipe is really good, easy and healthy.
INGREDIENTS:
3-4 salmon fillets ( or steak )
seasoned with:
2 tbsp. lemon juice
2 tbsp. worcestershire
garlic powder
rock salt, lemon pepper ( available in groceries )
cracked pepper
oregano about 1 tsp. (optional )
2tbsp. olive oil
butter
GLAZE:
1/2 cup Sweet soy ( available in asian markets/shops )
1/2 cup water or 1/4 of sherry
1 tsp. sugar
HOW TO :
1. Carefully rub the seasonings onto the fillets and marinate for half an hour.
2. Preheat oven 180 deg. ( Grill setting ) and line baking tray with foil, drizzle with olive oil.
3. Arrange salmon fillets skin down and add knobs of butter all around and in between fillets.
4. Grill for 20-30 minutes or until done and carefully transfer to serving dish or plate ( very tender and might break into pieces if not handled right ).
5. For the glaze- dilute sweet soy in water or use sherry if you have one, add sugar, and let simmer til sugar is dissolved. Glaze over salmon before serving. REMEMBER- GLAZE NOT COAT!
Simple and very gourmet. Serve with red wine, a side dish of fresh garden salad and lemon slices. Glazing is optional by the way so dont worry about it if the ingredients are hard to find. Just enjoy!
