We love chicken & I especially like cooking in my pretty red dutch oven too...and I like peas- a lot despite the fact that it is a high carb vege ( everyone knows that especially when I binge on wasabi peas at work, lol) Anyway- another recipe offering for you, again- it is one easy peasy dish :)
INGREDIENTS:
3/4 kgs. of Chicken- breasts or pieces up to you
2 large or 3 medium sized fresh, ripe tomatoes chopped or use a tin of chopped tomatoes
(i don't use tomato sauce if i can help it...)
a can of beer (yes- beer & make sure the whole lot goes into the dish Lol...)
olive oil
1 green & red capsicum, cubed or cut into strips
4-5 pcs. of small potatoes peeled & quartered
4 pcs. of crushed garlic
1 medium white onion
fresh peas, a cup
flat parsley
Optional: 1/2 cup of grated cheese or parmesan
HOW TO:
1. Preheat oven to 200 degrees. On a stovetop over medium heat, pour in the oil and saute garlic and onions for 2 minutes. Add the tomatoes until softened.
2. Add potatoes, cook for a minute only then add the chicken. Saute for another 5 minutes until lightly browned. Crack fresh sea salt & pepper over it.
3. Add the beer. Hmmm, the smell is divine....add the capsicums, cover with the lid.
4. Put in the oven and cook for 30 minutes or until chicken is cooked through. Check halfway the cooking time.
5. When cooked- take out of the oven (be careful because dutch ovens are heavy) uncover, add the peas & let it cook with the heat. Add the parsley, mix well and top with cheese if you want.
