Blueberry Crepes or Pancakes


The difference lies in the thickness of the batter and amount of  leavening agent. If you prefer pancakes increase the amount of baking powder to 1 tbsp, add an extra egg, and instead of a cup of milk only use 3/4 of a cup & have a generous helping of batter in the pan. If you prefer crepes on the other hand then stick with the recipe below and pour less batter to create thinner cakes.

INGREDIENTS:

2 cups of flour
1 tsp baking powder
3/4 cups blueberries
1/4 c sugar
1 large egg
1 cup milk, dribble in more if batter's too thick
vanilla
Topping:
butter
maple syrup
one of these: yoghurt/ cream/ evaporated milk or even vanilla ice cream.


HOW TO:



1. Mix all dry ingredients together, make a well in the center and + milk + egg & vanilla. 

2. Whisk until free from lumps. Add the berries. 

3. Prepare a shallow skillet, non-stick is always preferable. Turn heat to medium.  

4. Add a small knob of butter and when melted add in a ladle full of batter and whirl around the pan.  

5.  Wait until surface has formed air pockets before you flip over, making sure you work around the edges first with your spatula to prevent them from breaking up.

6. Serve with the topping that you prefer and a good delectable ice cream  :)
