Macadamia Brownies



Hi all, here's another brownie recipe which I posted especially for our play therapist at 3C- Joy :) (hi...). Very simple, it's just a mix and blend thing so nothing much to it- am pretty sure it's an error-proof recipe...great to whip up when you're rushing to bring something to a picnic or potluck, or just for the kiddies & kiddies at heart (wink!) to enjoy as a munchie at home...LOL.



INGREDIENTS:
1/2 c butter
2 c sugar (may seem a lot for some people, so just cut back 1/2 c if you wish)
3 eggs
1 c all-purpose flour (the less flour, the fudgier)
1 c cocoa
salt
1/2 c dark baking chocolate, chopped
vanilla
1 c roasted macadamia, coarsely chopped
*save half cup for topping


HOW TO:
1. In a saucepan, over low heat melt butter.
2. Add sugar, mix well. Add in cocoa, salt and flour, making sure there are no lumps.Remove from heat.
3. Crack in eggs one at a time, then add dark chocolate, blend til it melts.
4. Add vanilla and 1/2 of macadamia nuts.
5. Pour in pan, top with remaining nuts and bake at 180 deg. for about 20-30 minutes.
* I usually underbake my brownies to retain it's soft, chewy goodness but I do refrigerate once it has cooled.
Dust with icing sugar or cocoa and serve :)
